Lemon Pepper Wings

A classic Keto dish - meat. It’s also an easy college meal. I ran out of actual lemon pepper seasoning, do this is all from scratch.



Lemon Pepper Wings

2 tablespoon Lemon juice
Pepper
1/4 teaspoon Cayenne pepper
Oregano
Salt onion flakes 
Garlic powder
1 pack of chicken wings

Note: for each of the above seasonings, use enough to sprinkle a generous amount on each side.

1. Preheat oven to 400 degrees
2. Place wings on greased baking pan
3. Pour lemon juice on each wing
4. Sprinkle seasonings on each wing.
5. Flip wings on the baking pan 
6. Repeat steps 2-4 on this side of the wings.
7. Cover baking pan with tin foil 
8. Bake for 45 min - 1 hr
9. Take off tin foil and bake for an additional 10-15 minutes to achieve a crispy skin
10. Enjoy!

Oven Baked Cauliflower

Perfect replacement for Thanksgiving/Christmas turkey! It tastes just like a baked potato but with fewer carbs. I recommend dipping this in buffalo sauce or some gravy.



Oven Baked Cauliflower

1 head cauliflower
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon pepper
olive oil
1 tablespoon butter

1. Take your cauliflower and rub olive oil all over
2. Place cauliflower in a cast iron skillet. Evenly pour seasonings on cauliflower head.
3. Bake on 375 degrees for 1 hour.
4. Take skillet out of oven. Place butter on top to melt and help with browning
5. Bake for another 30 minutes or until cauliflower is browned
6. Enjoy!

Keto Chili Soup/Dip

I made this recipe in my instant pot the other day. I've been eating it mildly warm as a dip, but you can definitely eat this as a soup too. It's not strict keto, but if you heat up some low carb tortilla shells, you can use that to scoop it up and eat it with.


Keto Chili Soup/Dip

2 lb ground beef
2 tablespoons garlic powder
2 teaspoons salt
1 teaspoon pepper
1 15-oz can diced tomatoes
1 6-oz can tomato paste
1 14.5-oz can tomatoes with green chili's
3 bay leaves
2 tablespoons hot buffalo sauce (to flavor)


1. Place beef in instant pot
2. Cook on the pressure cook setting for 5-10 minutes
3. Add everything else to the pot
4. Cook again on the stew setting for roughly 10-15 more minutes (You can also place in microwave)

Spicy Celery Fries

Fries - it's what's for lunch!

If you are on the Keto diet, you probably haven't been eating regular potato fries. Remember those glorious beer-battered fries from the local bar? Well, here's the next best thing!


Spicy Celery Fries

3 individual stalks celery
Cayenne pepper - to flavor (I used about 2 tablespoons, but I love extremely spicy stuff lol)
1 tablespoon garlic powder
1 teaspoon salt
1 teaspoon pepper
About 1 tablespoon Heavy Whipping Cream (To coat the celery sticks)
2 tablespoons almond flour


1. Chop the stalks of celery into 3 pieces each
2. Take each piece and slice them down the middle to form thin "fry-looking" pieces
3. Place all the cut celery into a large bowl and pour in the heavy whipping cream. You'll need to pour in enough to be able to generously coat all of the celery pieces.
4. Pour the spices in the bowl and mix by hand
5. Pour the almond flour in bowl and mix again.
6. Place celery sticks on baking sheet and place in oven on 350 degrees for 15 min or until golden brown.
7. Dip and enjoy!

Zucchini Noodles with Lemon Pepper Shrimp

Most people who are on a low carb/ keto diet have or will miss pasta at some point. If not, you're just weird. This meal tastes just like a bowl of delicious spaghetti you can get at a nice restaurant but with WAY fewer carbs. Zucchini noodles are great for a keto diet because it has one of the closest flavors to traditional gluten pasta with some of the lowest carbs too. Plus, if you know how to make your own noodles, there's so much versatility to what you can make with one zucchini. One medium zucchini has a net carb worth of about 4 carbs. Not bad, huh? Stores like Kroger will have these for a few dollars, so they're not too expensive either.





Zucchini Noodles with Lemon Pepper Shrimp

1 cup mini shrimp
1 teaspoon lemon pepper seasoning
2 tablespoons olive oil
2 pinches of salt
1 package of zucchini noodles
Parmesan cheese, grated
basil pesto, homemade or store-bought

1. Take 1 tablespoon of the olive oil and pour it into a pan set on medium heat
2. Pour the shrimp into the pan and season with the lemon pepper and salt. Cook while stirring for a few minutes
3. Rinse the zucchini noodles, season with salt, and toss.
4. Cook the shrimp until they appear golden brown. Once done, place shrimp in a large bowl.
5. Add the second tablespoon of olive oil to the pan and add the zucchini noodles. Stir for a few minutes to allow the noodles to heat up a little bit so they aren't as crunchy.
6. Once they reach the desired consistency, add the zucchini noodles to the large bowl as well.
7. Add your preferred amount of Parmesan cheese and basil pesto to the bowl.
8. Mix contents a few times.
9. Serve and enjoy!

Greek Avgolemono Soup

Avgolemono soup is a classic Greek soup, and is essentially a lemony chicken soup. Many people make it with rice, but since this is a keto recipe, I'm not adding rice. I like mine super tart, but you can make it more mild if that's what you prefer.





Greek Avgolemono Soup

Makes 2 servings

3 cups chicken broth
1 pinch of salt
1/2 pinch of pepper
1 lemon, juiced (add more for tartness)
2 eggs, whisked
1 chicken breast, shredded or chopped up

1. In a pot, bring chicken broth to boil and cook for about 15 min. Add salt and pepper.
2. Take a cup of broth and pour into a separate bowl. Add lemon juice and whisk.
3. Slowly add the whisked eggs to the mixture while stirring. Whisk until completely mixed.
4. Pour mixture back into pot.
5. Add chicken and allow to cook for another 15 min.
6. Serve and enjoy!

Spicy Broccoli, Bacon, and Cheese

I really wanted mac and cheese one day, so I thought "how can I make a carb-loaded meal low-carb and still taste great?" Well, who doesn't like broccoli and cheese? However, just broccoli and cheese wouldn't make much of a meal, so I added bacon and jalapenos to kick it up a notch. The bacon gives it the protein it needs, and the jalapenos give it some spice. It's kind of like some jalapeno poppers you can get at your favorite bar but with broccoli!



Spicy Broccoli, Bacon, and Cheese

Makes 1 four-cup container.

8 oz block cheddar cheese
1/4 cup heavy whipping cream
2 jalapenos
1 head of broccoli
5 strips of bacon

The amount jalapenos, broccoli, and bacon can be adjusted to personal preference.

1. Fill a medium pot with water and bring to boil
2. Cut broccoli into small chunks and place in pot to cook
3. Once broccoli is soft, strain broccoli and place in a separate bowl
4. Put the cheddar cheese in a pot with heavy whipping cream and stir until melted on medium-low heat
5. Broil bacon on baking sheet in oven on 350. Take out when bacon is light-crispy.
6. Dab grease off bacon and place on separate plate
7. chop jalapenos and add to broccoli bowl
8. Place everything in main container, mix
9. Broil in oven until top is a toasty-brown
10. Enjoy!
