Spicy Celery Fries

Fries - it's what's for lunch!

If you are on the Keto diet, you probably haven't been eating regular potato fries. Remember those glorious beer-battered fries from the local bar? Well, here's the next best thing!


Spicy Celery Fries

3 individual stalks celery
Cayenne pepper - to flavor (I used about 2 tablespoons, but I love extremely spicy stuff lol)
1 tablespoon garlic powder
1 teaspoon salt
1 teaspoon pepper
About 1 tablespoon Heavy Whipping Cream (To coat the celery sticks)
2 tablespoons almond flour


1. Chop the stalks of celery into 3 pieces each
2. Take each piece and slice them down the middle to form thin "fry-looking" pieces
3. Place all the cut celery into a large bowl and pour in the heavy whipping cream. You'll need to pour in enough to be able to generously coat all of the celery pieces.
4. Pour the spices in the bowl and mix by hand
5. Pour the almond flour in bowl and mix again.
6. Place celery sticks on baking sheet and place in oven on 350 degrees for 15 min or until golden brown.
7. Dip and enjoy!

Keto Cinnamon Toast Crunch Cereal

I know I'm not the only one who has missed eating cereal. The wheat squares are my favorite. However, I just found this keto Cinnamon Toast Crunch cereal recipe the other day. IT IS SO GOOD. Doesn't take too long to make. Great with coconut milk. Try it for yourself!





Keto Cinnamon Toast Crunch

To make the cereal:
2 cups almond flour
1/2 teaspoon xanthan gum
1/2 teaspoon salt
1/2 teaspoon baking soda
2 teaspoons cinnamon
5 1/2 tablespoons unsalted butter
6 tablespoons granulated stevia
1 egg

To make the cinnamon sugar:
2 tablespoons unsalted butter
2 tablespoons granulated stevia
2 teaspoons cinnamon


Cereal:
1. Preheat oven to 350 degrees F.
2. Add all dry ingredients together and stir together well.
3. Melt butter and add to mixture.
4. Add egg. Stir until fully mixed.
5. Roll out dough to fully cover a medium sized cookie sheet.
6. Cut the dough into 1 inch squares. Poke tiny holes in each using a toothpick.
7. Freeze for 10 minutes
8. Bake for 8-12 minutes or until golden brown. The longer you bake them, the crunchier they are.

Coating:
1. Mix together the stevia and cinnamon.
2. Brush butter onto the squares
3. Sprinkle cinnamon sugar.

Next, just pop the squares out and place in a jar for storage or a bowl for serving.

German Chocolate Bars

These are some easy-to-make chocolate snacks or desserts that are also low-carb and taste great!





German Chocolate Bars

3/4 cup granulated Stevia
1 pinch of salt
4 tablespoons cocoa powder
3/4 cup heavy whipping cream
1 teaspoon vanilla extract
2 eggs
1/4 cup butter, melted
1 1/4 cup unsweetened coconut flakes
3/4 cup chopped pecans

1. Mix Stevia, salt, and cocoa powder in a large bowl.
2. Melt butter and add.
3. Add heavy whipping cream, eggs, and vanilla to the bowl. Stir until thoroughly mixed.
4. Stir in coconut and pecans.
5. Pour into a 9x9 cake pan and bake for 30 min on 350 degrees. I used a glass dish instead of a cake pan.
